Lemon Blueberry Loaf

Ingredients:

  • 1 1/2 cup flour

  • 1 tsp. baking powder

  • 1/2 tsp. salt

  • 1/2 cup vegetable oil

  • 1 cup sugar

  • 3 eggs

  • 1 tsp. vanilla extract

  • 1 cup sour cream

  • 1 cup fresh or frozen blueberries

  • 2 tsp. lemon zest (from approximately 2 lemons)

  • 1/2 cup confectioners sugar

  • 2 Tbsp. lemon juice

Directions:

Preheat oven to 350° F. Line a bread pan with parchment paper, then grease it and lightly dust with flour. Set aside.

Mix flour, salt, baking powder, and sugar in a large bowl. Add vegetable oil, vanilla and eggs and whisk until combined. Add sour cream and lemon zest and stir until combined, then gently fold in blueberries. Transfer to prepared pan and bake about 75 minutes or until a toothpick inserted into the center comes out clean.

Using a butter knife, gently loosen the sides of the loaf, then transfer to a wire rack to cool. Whisk lemon juice and confectioners sugar until smooth, then drizzle over the loaf and allow it to soak in before serving.
