Guacamole
Ingredients:
2 medium ripe avocados
1 Tbsp. finely diced white onions
3 tsp. store-bought salsa verde (see note)
1/4 tsp. salt
2 tsp. chopped fresh cilantro
1/2 tsp. finely chopped jalapeno pepper (optional)
Directions:
Cut avocados in half lengthwise and remove pit. Squeeze avocado flesh into a medium bowl. Add onion, salsa verde, salt, cilantro and jalapeno if using. Using a fork, roughly mash to mix until mixture until ingredients are just combined and texture is chunky. Serve immediately.
Cook’s Note: Using store-bought salsa verde is a quick and easy substitute for the lime juice and garlic in most recipes. You can choose the spiciness of your choice. (I use a mild version sold at Trader Joe’s to appease my kids’ intolerance to spice.) Alternatively, if you don’t have or prefer not to use store bought salsa, substitute it for the following: the juice of one small ripe lime + 1 garlic clove, finely minced.
