Vegan Italian Sub Sandwich

Ingredients:

  • 1 10-inch long soft hoagie roll

  • 2 Tbsp. vegan mayonnaise

  • 1 tsp. yellow mustard

  • 1/2 tsp. dried oregano

  • 2 slices vegan aged cheddar

  • 2 ounces vegan pepperoni

  • 2 ounces vegan ham slices

  • 2 ounces vegan turkey slices

  • 1 Tbsp. finely chopped red onion

  • 1 Tbsp. finely chopped pickles

  • 4 thin tomato slices

  • 1/3 cup shredded iceberg lettuce

  • 4 pepperoncinis, thinly sliced (optional)

  • 1 Tbsp. red wine vinegar

  • 1 tsp. olive oil

  • 1/2 tsp. dried oregano

  • Salt and freshly ground pepper to taste

Directions

Slice the hoagie roll lengthwise without completely severing the two halves. Spread with vegan mayonnaise and mustard, then layer the cheese, assorted meats, red onion, pickles, iceberg lettuce, and pepperocinis. Drizzle with olive oil and red wine vinegar, then sprinkle dried oregano, salt and pepper . Cut into two halves and enjoy!
